Ingredients:
  • 5 pounds Yukon Gold potatoes, peeled and cubed
  • 1 package cream cheese (8 ounce pack), softened
  • ½1/2  cup butter
  • 1 minced onion
  • 1/2½ cup of milk
  • 1 large egg
  • Salt and pepper (for seasoning)
  • Parmesan cheese, grated (optional)

Directions

  1. Preheat your oven to 350° Fahrenheit and prepare a large saucepan for your potatoes. 
  2. Toss in your peeled and diced Yukon Gold potatoes into the saucepan, cover with water, and sprinkle with salt. Cover saucepan and bring to a boil until your potatoes are tender and cooked for about 15 minutes. 
  3. Drain the water from the saucepan and transfer your potatoes in a large mixing bowl.  You can now start mashing your potatoes using a potato masher or a fork, gradually adding the milk and butter as you mash. 
  4. Switch your fork or potato masher into a hand mixer and whisk in cream cheese and minced onion in the mixture. 
  5. Prepare a small bowl and beat the egg, put a teaspoon of mashed potatoes in it and continue beating until smooth. Pour into the potato mixture.
  6. Season with salt and pepper depending on your taste. Then, pour mixture into a 2-quart casserole dish (you can top with shredded Parmesan cheese for a creamier mashed potato). 
  7. Bake in your preheated oven for about an hour just until the dish is golden brown and puffy.
  8. Remove from the oven and let it cool for about 5-15 minutes. 
  9. Slice and serve. 
  10. Enjoy!

CREAMY GARLIC MASHED POTATOES

Experience this one of a kind mashed potato recipe! This has an amazing cheesy taste blended with the exotic garlic flavor everyone would surely love.  The russet potato provides the priceless taste to this recipe and its garlic goodness topped it all up. I ought to say that this recipe is divine; it creates a heavenly kind of cheesy, spiced up flavor everyone would love to have! Try this recipe during a New Year’s dinner or Thanksgiving.

Ingredients:

  • 3 ½ pounds russet potatoes
  • 16 fluid ounces (2 cups) half-and-half
  • 6 ounces Parmesan cheese, grated
  • 2 tablespoons kosher salt
  • 6 crushed garlic cloves

Directions

  1. Prepare a large saucepan for your potatoes.  Peel your russet potatoes, slice them in small cubes, and toss into your saucepan with salt and enough water to cover it.  Simmer over medium-high heat and bring to a boil until potatoes are tender and you can poke a fork in it. 
  2. In another smaller saucepan, melt your half-and-half over medium heat and add in your garlic cloves. Let it simmer for about 1-3 minutes.
  3. Drain the water off the potatoes and put cooked potatoes in a large mixing bowl.  Mash using a fork or potato masher (if available), then gradually add the garlic/cream mixture while continuously mashing.  Sprinkle grated Parmesan cheese and continue mashing until all the ingredients are well-incorporated and potatoes are fully mashed but not lumpy.
  4. Set aside for about 4 to 5 minutes just enough to make the mixture thickens and flavors fully combined. 
  5. Serve and enjoy this potato goodness!
