These cookies don’t just appear in pumpkin shapes but are truly filled with pumpkin puree. You’ll need cookie cutters for the wonderfully tender cookie dough. These cookies are full of pumpkin flavors with a slight hint of orange taste.    

They’re nicely tender, flavorful cookies with a tinge of autumn. This sugar cookie recipe will definitely satiate your cravings for seasonal cookies. It’s another way to use up pumpkin especially for Thanksgiving.

This recipe makes 18 pumpkin sugar cookies

Ingredients:

  • 3/4 cup unsalted butter

  • 1/2 cup packed brown sugar

  • 1 tablespoon orange zest

  • 1/2 cup solid pack pumpkin puree (you can use fresh pumpkin puree)

  • 1 egg yolk

  • 1 teaspoon vanilla extract

  • 2 1/4 cups all-purpose flour

  • 1/4 teaspoon ground cinnamon

  • 1/4 teaspoon ground ginger

  • 1/4 teaspoon ground nutmeg

  • 1 pinch salt

Procedure:

In a medium-sized mixing bowl, cream butter together with brown sugar and orange zest. Fold in pumpkin puree and mix well until fully combined.

In another large mixing bowl, stir together flour, ginger, nutmeg, cinnamon and salt. Slowly add this into the pumpkin mixture, mixing until just combined. Scrape mixture into a large rounded dough and store in refrigerator for 30 minutes to chill. 

Preheat your oven to 375 degrees Fahrenheit. On a lightly floured countertop, knead and roll out dough until it becomes1/8 inch thick. 

With your cookie cutters, cut dough into pumpkin or pumpkin leaf shapes and some other desired thanksgiving layouts. Arrange 1 inch apart from each other on an ungreased cookie sheet. Bake for about 10-12 minutes or until light brown. 

Embellish with cream cheese frosting and/or candies.   Serve!

Super Cream Cheese Frosting Recipe

This is a homemade, incredibly delicious cream cheese frosting with just enough sweetness and a genuine cream cheese taste. Slather this over your pumpkin sugar cookies. 

Ingredients:

  • 1-     2 (8 ounce) packages cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups sifted confectioners' sugar
  • 1 teaspoon vanilla extract

Procedure:

Mix cream cheese and butter in a medium-sized bowl until very smooth. Add vanilla and mix. Gradually add confectioner’s sugar while stirring mixture consistently until nice and smooth. 

Spread on sugar cookies in a thick layer and keep leftovers in refrigerator.
