Waffle Sandwich Recipes for Breakfast

Basic Homemade Waffle Recipe for Breakfast

This simple recipe for homemade waffles will bring you great waffles that are delicious even when in plain but more delicious with toppings and sandwich filling. 

You can use their leftovers as waffle sandwiches for breakfast the next morning. This recipe makes 6-8 waffles.


Ingredients:
  • 1 1/2 cups flour (sifted is best, can use a combination of white and wheat flours, if desired)
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 3 teaspoons double-acting baking powder
  • 2 large eggs, separated (Separate egg yolks and whites in two bowls)
  • 1/2 cube of butter (1/4 cup) or vegetable oil of your choice
  •  2 cups milk (can use a mixture of fresh and powdered milk)

Directions: 

1.      Measure and prepare ingredients. Read waffle irons instructions carefully.

2.      Set waffle maker on a safe place, making sure cord is not hanging out. Preheat waffle maker following manufacturer’s instructions. 

3.      In a large mixing bowl, sift together dry ingredients. 

4.      In another bowl, beat together egg yolks, butter and milk. Gently pour this mixture into dry mixture

5.      In a small bowl, beat the two egg whites until stiff and gently fold into batter.

6.      Measure about 1/2 cup of the batter for each waffle, pour into the center of bottom layer in preheated waffle maker. Spread batter nicely and leave an inch towards the edge before covering waffle maker. 

7.      Cook waffles, following manufacturer’s instructions. 

8.      Wait until waffles are done as indicated by indicator lights or timer on your waffle maker.  Carefully open the lid and remove waffles using a single chopstick.

9.      Serve as one huge segmented waffle or break into four servings.

10.  Close lid while serving. After one minute, waffle maker will be hot enough for another batch of waffles.

11.  Repeat steps 6 through 10.

Ham, Bacon and Egg Waffle Sandwich
This waffle recipe yields 4 servings of thick waffle sandwiches. Waffles are filled with the meaty goodness of ham and bacon strips, plus, flavors are boosted with mustard and melted cheddar cheese. They’re topped with butter and nicely cooked in skillet until crisp and cheese melts. Cooking these waffle sandwiches makes them sop up more cheese and flavors.

Servings: 4     Time it takes: 30 minutes

Ingredients

·         8 frozen toaster waffles (plain or whole grain), unthawed

·         1 tbsp. Dijon mustard (optional)

·         1/2 lb. sliced deli ham

·         1/2 lb. cheddar, thinly sliced

·         4 tbsp. unsalted butter

·         8 bacon strips, cooked and drained

Preparation:

 Take out 4 of the homemade waffles from the previous recipe. Place in a large plate or on a work surface. Slather nicely with mustard, if desired.

Arrange ham, bacon strip, and cheddar cheese on top of each waffle, and then place remaining waffles like sandwiches. Slather the top of each waffle sandwich with 1/2 tablespoon of the butter.

In a large non-stick skillet set over medium heat, stir in remaining butter until melted.

Place the sandwiches in the skillet with their buttered-side up. Cook waffle sandwiches for 3 -4 minutes per side, pressing them with the back of a spatula and turning occasionally. Cook until cheddar cheese melts and waffles start to appear golden.

Variations: You can also fill these waffles with other savory ingredients. Try these sandwich fillings:
  • Turkey, mozzarella and honey mustard
  • Peanut butter Jelly and scrambled eggs w/ Swiss cheese

Waffles:

·         3/4 cup all-purpose flour

·         1/4 cup cornstarch

·         1/2 teaspoon baking powder

·         1/4 teaspoon baking soda

·         1/2 teaspoon salt

·         1 cup buttermilk

·         1/3 cup peanut oil

·         1 egg

·         1 teaspoon sugar

For Chicken Filling:

·         Peanut oil, for frying

·         1/2 cup all-purpose flour

·         1 cup panko bread crumbs

·         3/4 teaspoon Cajun seasoning

·         10 dashes hot sauce

·         1 egg, beaten

·         1 tablespoon water

·         12 chicken tenderloins

·         Salt and freshly ground black pepper

Mayo-Maple Sauce

·         1 cup mayonnaise

·         1/4 cup pure maple syrup

·         1/2 teaspoon mustard powder

·         1 teaspoon horseradish

Additional Filling:

·         12 slices applewood smoked bacon, cooked until crispy and drained

·         8 slices sharp Cheddar

Procedure:

In a large bowl, stir together flour, cornstarch, baking powder, baking soda, and salt. Stir very well to combine. Pour in buttermilk, peanut oil, egg, and sugar, whisking thoroughly. Set aside batter for 30 minutes. Preheat waffle iron. Pour batter evenly into the warm iron and then cook waffles according to waffle maker’s guidelines.

Take out waffles carefully with the help of a wooden spatula. Set aside to cool and then slice each large waffle horizontally. Store waffles inside the oven set on low heat, if needed.

Prepare the chicken filling. Grab three medium-sized bowls. In the first bowl, place the flour while in the other, combine panko and Canjo seasoning together. Stir in hot sauce, egg, and water in the third bowl. Get rid of the tendon from each tenderloin.

Heat a large griddle or skillet and then pour over peanut oil.

Coat each chicken tenderloin with flour by dipping and rolling into the first bowl. Dip and roll in egg mixture and then in panko mixture. Fry immediately in hot griddle for about 3-5 minutes or until golden brown. Sprinkle with salt and pepper and then set aside.

In another bowl, stir in mayonnaise, maple syrup, mustard powder, and horseradish.

Prepare the waffle sandwiches. For each ½ waffle, assemble 3 fried chicken tenderloin, 3 slices of bacon and 2 slices of cheddar cheese on top. Lay the waffles on an ovenproof plate and then broil in oven until cheese melts. Remove from oven. Spread each waffle with 3 tablespoons of the maple mayonnaise and then cover with another waffle on top of each to make a sandwich.

Serve warm!
